I have another lovely pudding recipe for you to enjoy that is nice and low carb and totally on plan! These are the best kind!! So from the "Low Carb Gourment Cookbook" we chose to try out the Silken Chocolate Pudding recipe. This one struck me as strange because it has tofu in it!! but we trusted it and gave it a go.
Silken Chocolate Pudding |
Ingredients:
120ml Double Cream
120ml Water
2 Large Eggs Yolks
90g Unsweetened Chocolate (we just found the one with the lowest carbs that we could on the shelf)
80g Butter
285g Soft Tofu (I have a feeling we used the wrong thing but our supermarket only has the block stuff so I used that)
8 tbsp Sweetener
1 tsp Vanilla Extract
Bring the cream and water to the boil.
Blend the egg yolks completely and then slowly whisk in the heated cream. Pour it back into the saucepan and heat on a low temperature until thickened.
Add the chocolate and butter to the mixture and continue stirring until everything has melted, it will look very odd at this stage and completely split and curdled. Don't worry, apparently it's meant to look like this!!
In a food processor combine the tofu, sweetener and extract blending until smooth. Add the chocolate mixture and blended everything together until completely smooth. Transfer to a bowl and chill it for at least 4 hours.
I tried this mixture as I put it in the fridge and I really didn't think it tasted good at this stage. I was dreading trying it properly when it was chilled.
However, I did try the mixture and it was really nice once cold. We had it with a spoonful of double cream and I thought the combination was really nice. The pudding alone is quite heavy so the cream helps to lighten it up and also lessen the richness. The pudding has a lovely strong chocolate taste and is really creamy.
This pudding is certainly one to have occasionally as it has 4.5g of carbs in it, plus being a little longer to make. It is worth having on special occasions though and is very tasty. The recipe above makes 8 servings so make sure you don't have any more than you should otherwise your carbs will be much higher. Ours was carefully divided up by Gary to ensure we had 8. This isn't a huge bowl but it was enough to give us a pudding fix.
