Low Carb Almond Puff Pancakes

We decided to try a breakfast recipe from "Low Carb Gourmet" and the selected recipe was Low Carb Almond Puff Pancakes. According to the book these have less than 1g of carbs per pancakes, which is great, and means we've greatly enjoyed them in the last week while we've been away.

We started off by having these for breakfast and ate them with bacon, however, I felt they were much more suited to a sweet ending rather than savoury so we've turned them into more of a dessert. So how are they made? what's in them?

Ingredients:
4 Eggs, separated
100g Ground Almonds,
150ml Double Cream
1-2 tsp Sweetener
Butter for the frying pan

Whip up the egg whites so they form soft peaks.

Mix all of the rest of the ingredients together (except the butter) to form a reasonable thick paste.

Spoon around 1 tbsp of egg white into the yolk mixture to loosen up the mixture. Carefully fold in the rest of the egg white mixture in maintaining all of the air that's been worked into it.

Heat up a frying pan with some butter. Once it's hot spoon 1 tbsp of mixture in for each pancake, these work better if they're smaller rather than larger. They don't have the same structure that you normally get from pancakes, which is why they work as smaller ones. You need to be careful not to turn these over too early as well because the pancake will fall apart, however, if you wait until you can see it's cooked on top then it'll hold together beautifully.

Cook until both sides are nice and solid and your pancakes are done.

We've been enjoying ours this week with clotted cream and cream, yummy, but of course you can have any variation of low carb topping on it.

Almond Puff Pancakes
These are certainly delicious and have been a hit all week. They were great for when we wanted some pudding, we were on holiday after all, but didn't want to break our diet. These would be great for a treat if and when you need one.
